This soup is full of flavor! From its tomato base to the Italian herbs, it is sure to be a fan favorite even for the most picky eaters! I can vouch for that because my husband LOVED it! And he is as picky as they come.

Ingredients Needed For This Recipe

This lasagna soup only requires TEN ingredients. And if you are making this in the slow-cooker, it only take TEN minutes to throw this together and it will be a 10/10!!!

Most of these ingredients are staples in the kitchen so I find this is one of those busy day meals I can throw together at the last minute.

  • Ground Turkey, Ground Beef, or Ground Sausage – I use a combination of both ground turkey and sausage.
  • Marinara Sauce – Rao’s is my go to marinara sauce!
  • Canned Diced Tomatoes – You can use plain diced tomatoes or I prefer a can flavored in basil and garlic.
  • Beef Broth – If you can, I always go for the organic option.
  • Italian Seasoning – Whether dried or fresh, add all your favorite seasoning to bring the taste together
  • Onions and Garlic – Finally chop your onions and mince your garlic. You can always use minced garlic in a jar if you do not have fresh on hand.
  • Crushed Red Pepper – Just a pinch will level up the flavor.
  • Lasagna Noodles – If you can’t find mini noodles, use regular-size lasagna noodles and break them up.
  • Cheese – I use mozzarella for this recipe.?Other options are parmigiana or an Italian blend.

How To Make Lasagna Soup In The Slow Cooker:

  • Brown your beef – I brown mine directly in my slow cooker to not dirty extra pots. But you can certainly brown meat on the stovetop and transfer it to a slow-cooker when done.
  • Add in marinara, diced tomatoes, beef broth, onions, garlic, and seasonings.
  • Cook on high for 3 hours or low for 6
  • During last 30 minutes add lasagna noodles
  • When finished, sprinkle with cheese of your choice and let melt for an extra 10 minutes
  • SERVE AND ENJOY!!!!

How To Store Leftovers:

Leftovers: Leftovers can be stored in the fridge in an air-tight container for up to 4 days. The lasagna noodles will soak up the liquid, making this more like leftover lasagna. It is still delicious.

TIP: You could warm up on the stovetop in a saucepan and add some more beef broth.

What To Serve It With:

Garlic bread comes to mind when serving any Italian dish! Other great options include breadsticks, rolls, or even fresh Italian bread! My husband will eat cornbread with everything! Including this lasagna soup. To each their own I guess. The point is, there are plenty of options for what will complement this soup.

This slow-cooker lasagna soup is so easy to make and tastes AMAZING!?I promise you it will become part of your meal rotations all year long.

Ingredients

  • 1lb Ground Turkey (or Lean Ground Beef)

  • 24 Oz Marinara Sauce

  • 14 Oz Can Diced Tomatoes

  • 1/2 cup of chopped onion

  • 4 Pieces of Crushed Garlic

  • 2 TBS of Italian Seasoning

  • 32 Oz Beef Broth

  • Sprinkle of Crushed Red Pepper

  • 10 Uncooked Lasagna Noodle

  • 3/4 Cup Mozzarella Cheese

Directions

  • Brown your beef
  • Add everything to a slow cooker except for the lasagna noodles and cheese
  • Cook on HIGH for 3 hours or LOW for 6
  • During the last 30 minutes, break up lasagna noodles and throw into slow cooker. Cook for an additional 30 minutes
  • Add Mozzarella cheese in the last 10 minutes,
  • Stir and serve!!!!

Notes

  • INSTANT POT VERSION:?After browning beef in instant pot, add remaining ingredients except for the cheese, and cook on HIGH for 3 minutes.?Let pressure naturally release for 7 minutes.?Release the remaining and ENJOY!
