Throw your chicken, onions and peppers in a large bowl. Add 2 TBSP of olive oil and fresh squeezed lime juice. Next sprinkle in your seasoning. Be sure everything is coated.

Next, spread everything onto a sheet pan and bake at 350 degrees for about 25 minutes. If you want crispy edges on your veggies, turn the broiler to medium and broil for 3-4 minutes.

Ingredients

  • 1.5 Pounds Chicken Breast sliced into thin strips

  • 1 tsp Cumin

  • 1.5 TBSP Chili Powder

  • 1 tsp Paprika

  • Salt and Pepper to your liking

  • 3 Bell Peppers – I use a mix of green, red, and yellow

  • 1 Medium Onion

  • 2-3 cloves Minced Garlic

  • 6 TBSP Extra Virgin Olive Oil

  • Juice of 1 Lime

  • Cilantro

  • Flour Tortillas – I prefer Mission Carb Balance Wraps

Directions

  • Preheat oven to 375 degrees
  • Spray a sheet pan with cooking spray or use a silicone mat to avoid sticking
  • Combine dry ingredients and set aside
  • Put Chicken, Peppers, and Onion in a bowl. Add the Olive oil and lime juice and mix getting everything coated. Now add seasoning and mix again.
  • Spread everything out evenly on the prepared cooking sheet.
  • Bake for 30-35 minutes in oven, turning halfway through.?
  • Once the chicken is cooked, turn the oven to BROIL MEDIUM to crisp the peppers – about 3 minutes
  • Remove from oven and squeeze fresh lime juice over chicken and veggies
  • Top with fresh cilantro and serve in warmed tortilla wrap
